This is the before and after of a picture that I fixed somewhat in Photoshop. Not perfect, but much better. It's pretty amazing what you can do with the clone stamp thing. Notice how I got rid of the people in the background. Pretty cool.

Looks good! Here;s another tip to make sure your blue skies stay blue: once all your settings are done and you're happy with the way things look, if the sky needs a color boost, go back tot he levels and drops the highs in the Blue channel.
For example, open your fixed Jack pic and set the blue channel high to 230 -- you'll get an instant near-perfect blue sky, and hardly anything else in the pic will change hue.

Man, can you tell I just woke up?
You can get rid of people in the background by screaming, "He's got a gun!" at the top of your voice.
Or breaking wind and laughing like a hyena. That works too.
